Gutti Vankaya with Raw Cashewnut


Ingredients
Small Brnjal - 1/4 kg
Raw cashewnuts - 1 cup
Red chilly powder - 1 1/2 tsp
Salt - as per your taste
Turmeric powder - a pinch
Coriander - for garnishing
Water - as required
Oil - 5 tsp

Stuffing masala
cumin - 1 1/2 tsp
Coriander seeds - 1 tsp
poppy seeds - 2 tsp
coconut pieces - 2 tsp
cashew - 4
Grind all the ingredients into a paste with little water.Take the paste into a bowl and firmly mix it with 2 spn of butter or ghee.

Method
1.Soak the Raw cashewnuts in boiling water for about 2 hours until it is easy to peel off the skin. Deskin and keep them aside.

2.Wash Brinjals,make 2 slits to form a cross leaving the stalks intact and Stuff the brinjals with the prepared paste.

3.Now heat oil in a pan and add stuffed Brinjals,mix,covered in a low flame for atleast 15 min so that brinjal gets cooked well.

4.now add 1/2 glass of water and cook for few mins.

5.now add soaked cashewnuts and cook,covered in a low flame until oil leaves the sides of the pan.

6.garnish with chopped coriander leaves.
