Stuffed Gilki/Stuffed Sponge Gourd
Ingredients
Sponge Gourds (Gilki or Galgal Turai) - 3
Cooking oil - 4 tsps
turmeric powder - 1/2 tsp
Red chilli powder - 1 tsp
salt - as per taste
For stuffing
cumin (jeera) seeds - 1/2 tsp
coriander seeds - 1 tsp
ginger pieces - 1 tsp
coconut pieces - 2 tsps
Fry all the above ingredients one after the other in 2 tsp oil.grind into paste with little water and keep it aside.
Method
1.Scrape the sponge gourd,throw the cut ends and cut it into 3 inch (approx) long pieces. Make a lengthwise slit in each piece.
2.Fill the slits of sponge gourd pieces with the prepared paste.
4.Heat 2 tbsp of oil in a non sticking frying pan, put some cumin seeds and once they are brown put the stuffed gourd pieces one by one in the pan. Add remaining masala which was left after stuffing.Add salt, turmeric,red chilli powder.Put a lid and let it cook on low medium heat until the skin of the vegetable is tender. Cook now without lid for some time so that the extra water released by Galgal will dried up.
5.Turn off heat and serve hot with rice,roti or chepati.
