Ingredients
karela (bitter gourd) - 250 gms
green chillies - 2
red chillies - 1
Mustard seeds - 1 tsp
jeera - 1 tsp
urad dal - 1 tsp
jaggery (or sugar) - 1 tsp
red chili powder - 1 tsp
turmeric powder - 1/4 tsp
salt - as per taste
curry leaves - a few
Tamarind - a lemon sized(soaked in warm water and extract juice)
oil - 2 tsps
Method
1.Wash, drain and scrape the rough skin of the bitter gourd.Chop into small pieces. Add 1/2 tea spoon salt, mix and leave it aside for 10 mins.Add a cup of water.Squeeze and remove the water.This reduces the bitterness.
2.Heat oil in a Kadai,Add mustard seeds,jeera and urad dal.
3.When mustard seeds starts spluttering,add red chillies, green chillies,curry leaves. Saute for few mins.
4.Now add turmeric powder,mix well and add the karela pieces to it.Stir,close the lid and cook for 8 to 10 mins in a medium flame.
5.Now add the tamarind juice and jaggery to it.Cook until the gravy thickens and switch off the flame.
