Sabudana Khichdi


Ingredients
Sabudana (Saggubiyam/Sago) – 2 cups
Upvas Salt/Rock Salt – as per taste
Lime Juice – 3 tsp (or to taste)
Sugar – 2 tsp (or to taste)
Roasted Peanuts powder – 2 tsps (or to taste)
Ghee/Peanut oil – 1 tsp
Cumin Seeds – 1/2 tsp
Whole Peanuts – 2 tsp
Potato – 1 medium sized (peeled and chopped into small thin slices)
Shredded Coconut – 2 tsps (optional)
Curry leaves – a few
water - as required

Method
1. Wash and soak Sabudana in water (covered) for minimum 5 hrs or up to 8 hrs.Drain the water and keep it aside for an hour.

2. Heat Ghee in a non-stick pan.

3. Add Cumin Seeds and let them splutter.

4. Add Whole Peanuts.Fry for few minutes and add curry leaves.

5. Add chopped Potatoes and Salt. Cook uncovered until potatoes are tender.

6. Add sabudana mixture to the potatoes and mix well.

7. Set stove to low, cover and cook for 1-2 minutes.

8. Add Sugar, Lime Juice and Peanut powder and mix gently.

9. Add Shredded Coconut and chopped Cilantro Leaves and mix.

10. Keep stirring every 1-2 minutes and re-covering the pan. Sprinkle a little water if the sabudana look like they are drying out.

11. Serve hot.
