Samo rice Upma
Ingredients
Samo Rice (Variche Tandul, Bhagar, Kodri) – 1 cup
Green Chillies – 5 (cut into big pieces)
Jeera – 1 tsp
Ghee/Peanut Oil – 2 tsps
Upvas Salt/Rock Salt - as per taste
Potato – 1 big (cut into medium pieces)
Water - as needed (approx. boil 2 cups of water)
Chopped coriander leaves - for garnish
Method
1.Heat a kadai and dry roast samo rice and keep it aside.
2.Heat Ghee in a non-stick pan,add cumin seeds,chillies and saute for a minute.
3.Add Potato pieces to it and fry till it becomes tender and then add samo rice and salt.
4.Now add Samo riceand fry at least 5 -7 mins continuosly on a medium to high flame.
Add boiling water to it and mix well and cover it with a lid.
5.Check after 2 mins, if the water is soaked and samo is still raw then add some more water.
6.Now after 5 to 6 min samo will be puffed and cooked.
Serve hot garnished with coriander leaves.
