Carrot Coriander Rice


Ingredients
Rice - 2 cups
Carrot - 1 cup(peel,wash,throw the cut ends and chop into medium cubes)
Lemon Juice - 1 tsp
Turmeric Powder - 1/4 tsp
Salt - as per taste
Water - 4 cups

To grind
Coriander leaves - a bunch
Green chillies - 1 to 2(or acc. to ur spice)
Fresh ginger - 1" piece

For seasoning
Oil - 2 tsps
Ghee - 2 tsps
Cinnamon stick - a small piece
Cloves - 2 Nos
Cardamon - 2 Nos
Bay leaf - 1
Fennel seeds - 1 teaspoon(optional)

Method
1.Wash and soak the rice in water for about 15 minutes.

2.Grind Coriander leaves,green chillies,ginger to a fine paste.

3.In a pressure cooker,add the oil and ghee.When it is hot add cinnamon stick,cloves,cardamom,bay leaf and fennel seeds.Fry for few secs.

4.Add turmeric powder,Carrot Pieces,salt and fry for 5 mins.

4.Add Coriander leaves paste and stir fry for few minutes.

5.Drain the excess water from rice and add to the seasoning.Mix well.

6.Add Water and adjust salt.Stir once again.

7.cook rice either in rice cooker or on stove.

8.When it is cooled,add lemon juice and mix gently.

9.Serve with Raita or any gravy.

Variations:
1.You can use coconut milk instead of water.
2.You can garnish with fried cashews.
