Mint Rice


Ingredients
Rice - 2 cups
Lemon Juice - 1 tsp
Turmeric Powder - 1/4 tsp
Salt - as per taste
water - 4 cups

To grind
Pudina leaves - 2 cup
Green chillies - 1 to 2(or acc. to ur spice)
Fresh ginger - 1" piece

For seasoning
Oil - 2 tsps
Ghee - 2 tsps
Cinnamon stick - a small piece
Cloves - 2 Nos
Cardamon - 2 Nos
Bay Leaf - a small piece
Fennel seeds - 1 tsp(optional)

Method
1.Wash and soak the rice in water for about 15 minutes.

2.Grind Pudina,green chillies,ginger to a fine paste.

3.In a pressure cooker,add the oil and ghee.When it is hot add cinnamon stick,cloves,cardamom,bay leaf and fennel seeds.Fry for few secs.

4.Add turmeric powder,Pudina leaves paste and salt and stir fry for few minutes.

5.Drain the excess water from rice and add to the seasoning.Mix well.

6.Add water and adjust salt.Stir it once again.

7.Cook on either Rice cooker or Stove.

8.Add lemon juice and mix gently.

9.Garnish with few fresh Mint leaves and lemon wedges.Serve.

Variation:
You can even use coconut milk instead of water.
