Rajma Rice
Ingredients
Rajma - 1 cup(soak overnight in enough water)
Rice - 1 cup
finely chopped Tomato - 1
Coconut milk - 2 cups
Chilli-ginger paste - 1 tsp
Salt - as per taste
Chilli Powder - 1 tsp(or acc. to ur spice)
Coriander powder - 1 tsp
Garam masala powder - 1 tsp
Coriander leaves - a few
Seasoning
Ghee - 2 tsp
Oil - 2 tsps
Cloves - 2
cinamon stick - a small inch
Bay leaves - 2
curry leaves - a few
mint leaves - a few
Method
1.Heat a ghee and oil in a pressure cooker.Add cloves,cinamon stick,bayleaves and sault few seconds.
2.Add curry leaves,mint leaves and fry for 2 mins.
3.Add Chilli-ginger paste and fry till the raw smell goes.
4.Add chopped tomato and fry till tomato is cooked well.
5.Add soaked rajma,chilli powder,salt and garam masala powder.Add little water and mix well.
6.Pressure cook for 3 whistles.Allow the steam to leave .
7.Then,Add rice to the mixture and mix well.Then add coconut milk.Adjust salt.
8.Cook on either Rice cooker or Stove.
8.Garnish with coriander leaves and Serve.
