Drumstick Sambar

Ingredients
Toor dal - 1 cup
Drumstick - 1 big (slightly grate,wash and cut into equal sizes)
Tomato -1 medium (chop into big slices)
Green chilli - 2(slit them lenght wise)

Sambar powder - 1 tsp
Tamarind  - small lemon sized (soak in a cup of warm water and extract)
Salt - to taste
chilli powder - to taste
Turmeric powder - 1/4 tsp

coriander leaves  for garnishing
Jaggery - small piece(optional)
water - 3 cups + 3 cups

Seasoning
Oil - 4 tbsp
Jeera - 1/2 tsp
Mustard seeds - 1/2 tsp
Dry red chillies - 1 or 2 (cut each into half)
Curry leaves - A few
hing - a pinch

Method
1. In a cooker dry roast Toordal till the raw flavour goes(or you can add directly) and wash it and add 3 water,close the lid,pressure cook for 1 whistle and simmer for 15 minutes.Turn off and let pressure completely comes out.

2. In the meanwhile,Heat oil in a kadai.Add the seasoning and let them pop.Add green chillis,chopped tomatos,Drumstick pieces and cook till vegetable become slightly tender.

3. Add turmeric powder,chilli powder,sambar powder and cook for a minute.

4. Add tamrind extract,3 cups water,jaggery piece and allow it to come for a boil.

5. Now add the cooked dal,salt and allow it to boil for 10 mins.


6.Turn off heat and garnish with coriander leaves
