Ingredients
Small Brinjals - 1/4 kg
chopped Onions - 2 (small size)
green chillis - 2
curry leaves - a few
coriander - for garnishing
Oil - 6 tsp
Stuffing(grind into a thick paste with little water)
chopped Ginger - 2 tsp
Garlic - 4 cloves
chopped Coconut - 2 tsp
Coriander seeds - 1 tsp
Jeera - 1/2 tsp
Cloves - 4
Green cardamom pods - 4
Cinnamon stick - small piece
Method
1.Wash Brinjals and make 2 slits to form a cross leaving the stalks intact.
2.Heat 4 tsps oil in a pan,add brinjals and fry till they become tender,remove from heat and keep it aside.
3.Stuff the fried brinjals with the prepared paste.
4.Heat 2 tsp oil in a pan or heavy bottomed kadai and add chopped onions,gren chillis,curry leaves and fry them till onions become light brown.
5.Now add the stuffed Brinjals,mix,covered in a low flame until oil leaves the sides of the pan.
6.Garnish with chopped coriander and serve hot with rice.
