Coconut milk rice


Ingredients
Basmati Rice / Jeeraga samba unboiled rice - 2 cups
coconut milk - 4 cups
cloves - 2
cardamom - 2
cinnamon - 1 inch
Bay leaf - 2
mint leaves - little
oil - 4 tsps
ghee - 2 tsps
ginger greenchilli paste - 1 tbsp

Method
1.Measure the rice using a cup. Wash and clean it. Drain water and keep aside for 30 minutes.

2.Measure water using the same cup. The water should be twice the quantity of rice. Use this water to extract milk from shredded coconut.

3.Take a cooker,heat it with a oil and ghee.Add cloves, cinnamon and cardamon ,bay leaves,mint leaves and allow it to fry for few minutes.

4.Now add ginger-greenchilli paste and fry till the raw smell goes.

5.Now add the washed rice to it,mix it,add coconut milk,add salt and close the lid and pressure cook in simmer for few minutes until the rice get well cooked....

6.Switch off flame.Garnish with a handful of chopped cilantro.

7.Coconut milk rice is ready! Serve hot with raita and any vegetarian spicy curries.
