Beerakayi Tomato Curry

Ingredients
Ridge Gourd - 3(peeled and chopped into small pieces)
Chopped Tomatos - 1 medium sized
Chilli-ginger Paste - 2 tsps
Red chilli powder - as per taste
Dhaniya Powder - 1/2 tsp
Salt - as per taste
Turmeric powder - 1/4 tsp
Coriander leaves – for garnishing

Tadka/Popu
oil or ghee - 2 tsps
Cumin seeds - 1/4 tsp
Mustard seeds - 1/4 tsp
Curry leaves - a few

Method
1.Heat oil in a cooking vessel.
2.Add tadka/popu and fry for few seconds.
3.Add chilli-ginger paste and fry till raw smell goes.
4.Add chopped tomatos and sault till they become juicy.
5.Add turmeric powder,salt,chilli powder,dhaniya powder.
6.Sault for a second,now add ridge gourd pieces and combine well.
7.Close the vessel and cook until the pieces are soft.
8.Turn off the heat and garnish with coriander leaves.
9.Serve hot with Rice or Roti.


Note:
1.After peeling ridge gourd. Cut a small piece from each one and taste it. Make sure that it is not bitter.
