Anapakayi Kura

Ingredients
Bottle Gourd - 1 medium sized(peeled and chopped into medium cubes)
Green chillies - 2
Red chilli powder - 1/2 tsp
Salt - 1/2 tsp
Turmeric powder - 1/4 tsp
Chopped tomatos - 1
Coconut milk - 1 cup
Coriander leaves – for garnishing

Tadka/Popu
oil - 2 tsps
Cumin seeds - 1/4 tsp
Mustard seeds - 1/4 tsp
Red chillies - 1
Curry leaves - a few

Method
1.Heat Oil in a cooking vessel.
2.Add tadka/popu and fry for few seconds.
3.Add turmeric powder,bottle gourd pieces and salt.
4.Close the vessel and cook till the pieces become tender.
5.Add Chopped Tomatos and cook for few mins.
6.Add chilli powder and cook for few mins.
6.Add coconut milk and allow it to cook until the bottle gourd is fully cooked.
7.Turn off the heat and garnish with coriander leaves.
