Gujarati Kadhi

Ingredients
Yogurt – 1 cup (beaten)
Water – 3 cups
Besa – 4 tsps
Salt – as per taste
Turmeric Powder – 1/4 tsp
Ginger – 1/2 tsp (grated)
Green chilies – 1 or 2 (finely chopped)
Sugar – 1 tsp (optional)

For Seasoning
Oil – 2 tsps
Ghee/clarified butter – 1 tsp
Cumin Seeds – 1/2 tsp
Mustard seeds – 1/2 tsp
Fenugreek Seeds (Methi) – 10 seeds
Whole red chili – 1
Cloves – 4
Cinnamon stick– 1 small piece
Asafoetida(Hing) – 1/8 tsp
Curry leaves – a few
Chopped Cilantro – a few

Method
1. Take a Bowl,mix together Yogurt,Water and Besa well until there are no lumps.

2. Add Salt,Sugar,Turmeric Powder,Ginger and Green Chilies.

3. Bring mixture to a boil on medium flame by stirring continuously.

4. Remove from flame and keep it aside.

5. Mean while,In a separate small pan,Heat Oil and Ghee.

6. Add Cumin Seeds, Mustard Seeds and allow them to spluter.

7. Add Fenugreek Seeds,Whole Red Chili,Cloves,Cinnamon and stir it once and Turn off flame.

8. Now add Asafoetida,Curry Leaves and Cilantro and mix well.

9. Immediately,add the seasoning to the boiled yogurt mixture and allow it to boil once more.

10. Serve it with Khchidi.

Tips:
1. To prevent yogurt from separating when heated,Keep stirring continously until mixture boils.
2. To make thicker Kadhi,add more besan.
