Masala Khchidi

Ingredients
Rice – 1 cup
Toor Daal – 1/2 cup
Water – 3 cups
Oil – 4 tsps
Ghee/Clarified Butter – 2 tsp
Cumin Seeds – 1/2 tsp
Cinnamon Stick – 1 inch piece
Raw Peanuts – 2 tsps(optional)
Cloves – 4
Hing – a pinch
Turmeric Powder – 1/4 tsp
Black Pepper powder - 2 Pinches (optional)
Garam Masala Powder – 1/2 tsp
Green Chilies – 1 slit (or to taste)
Ginger – 1 tsp, minced
Any chopped Vegetables of ur choice - 1 cup (like carrot,peas,etc)
Salt – as per taste
Red Chili Powder – as per taste

Method
1. Combine Rice and Toor Daal,wash well and Soak in water for 15 minutes.

2. Heat Oil and Ghee in a pressure cooker,Add Cumin Seeds and allow them to sizzle.

3. Add Cinnamon Stick and Raw Peanuts.Cook until Peanuts turn light brown.

4. Add Hing,Turmeric Powder,Cloves and Black Pepper powder,Garam masala Powder. Mix quickly.

5. Immediately Green Chilies and Ginger. Mix and cook for about 1 minute.

6. Add Vegetables,Salt,Red Chili Powder and mix well.

7. Add Rice and Daal with Water.

8. Adjust the salt,Close the lid and cook until 1 whistleand immediatly switch off the stove.

9. When pressure completly goes,open the lid and mix it gently.

10.Serve hot with Kadhi.
