Brinjal Poppy seeds curry/Vankayi Gasagasala Kura

Ingredients
Brijal - 250 gms (wash & cut into big vertical pieces)
Ginger paste - 2 tsps
Hing - a pinch (optional)
Turmeric Powder - 1/4 tsp
Salt,chilli Powder - as per taste
Oil - 3 tsps
Chopped coriander leaves - for garnishing

Paste
Cashewnuts - 50 gms
Poppy seeds - 2 tsps

Soak in water for 1 hour and grind into a fine paste by adding little water.

Method
1.Heat Oil in a kadai,add Brinjal pieces and fry till golden brown and transfer it to a bowl.

2.Now heat the remaining oil in kadai,add ginger paste,hing,turmeric powder and stir it once.

3.Add the prepared paste and sault for few mins.

4.Add salt,red chilli powder and fry for few more mins.

5.Now add Fried Brinjal pieces to it and mix well gently and cook for 5 min.

6.Turn off heat and garnish with coriander leaves. This curry goes well with any fried rice.
