Brinjal Tomato Curry/Vankayi Tomato Kura

Ingredients
Brinjal - 250 gms (wash & cut into meduim sized cubes)
Chopped Tomatos - 2 medium sized
Ginger paste - 1 tsp
Salt,Chilli Powder - as per taste
Mustard seeds - 1 tsp
Jeera - 1 tsp
Hing - a pinch
Jeera Powder - 1/2 tsp
Saunf/fennel seeds - 1 tsp
Oil - 2 tsps

Method
1.Heat Oil in a Kadai,Add mustard seeds,Jeera,fennel seeds and fry till they pop.

2.Now add Hing,turmeric powder,ginger paste and stir it once.

3.Add chopped tomatoes and fry till oil gets separated.

4.Add Brinjal Pieces,salt,red chilli powder,mix well gently.

5.cover and cook until brinjals are cooked well.

6.Serve.
