Dondakayi Paneer Curry

Ingredients
Dondakayalu/Ivy Gourds - 1/4 kg(wash,nip the tip & tail ends,make a + slit length wise)
Turmeric powder - 1/4 tsp
Dhaniya Powder - 1 tsp
Jeera - 1 tsp
Curry leaves - a few
Salt - as per taste
oil - 2 tsps
water - little

For stuffing
Coriander leaves - 1 cup
Fresh Coconut pieces - 3 tsps
Green chillis - 2 to 3
Salt - as per taste
Grated Paneer - 1 cup

1.Take a blender,Add in coriander leaves,coconut pieces,green chilli,salt and grind into a fine paste by adding little water.
2.In a bowl,Add ground paste,Paneer,mix well and keep it aside.

Method
1.Pressure cook Ivy gourds by adding salt,turmeric and let them cool.

2.Now Stuff all the boiled ivy gourds with the prepared stuffing and keep it aside.(Make sure that you save some left over stuffing to make gravy for the curry)

3.Heat Oil in a Pan,Add Jeera,curry leaves and fry for a minute.

4.Now add the left over stuffing and fry for 2 minutes.

5.Add stuffed gourds,mix gently,cover and cook until oil gets separated.

6.Now add little water,mix it,cook for few more mins.

7.Lastly,add dhaniya powder,mix it well and turn off heat.

8.Its ready to serve with Rice or Roti.
