Ingredients
Chamadumpa - 250 gms (boil,peel and cut into Big pieces)
Tamarind juice - Big lemon size
Tomato - 1 (finely chopped)
Green chili - 1 tsp
Red chili powder - 1/2 tbsp
Turmeric powder - 1/2 tsp
Coriander powder - 1 tsp
Curry leaves - a few
Cumin seeds - 1 tsp
Mustard seeds - 1/2 tsp
Fenugreek seeds - 1/4 tsp
Jaggery - small piece
Salt - to taste
Oil - 3 tsps
coriander leaves - for garnishing
Method
1.Heat oil in a pan,add mustard seeds after they splutter add cumin seeds,fenugreek seeds,hing,greenchilli and fry for few mins.
2.Add curry leaves,green chili and fry for few more mins.
3.Now add Boiled Arbi,salt,turmeric,red chili powder,cumin powder,coriander powder and fry for 2 mins.
4.Now add tomato and fry for few more minutes.
5.add tamrind water,Jaggery and allow it to boil until juice becomes little thick.
6.Turn off heat and garnish with coriander leaves.
