Ingredients
Urad dal - 1 cup
Rice – 3 cups
Poha/Atukulu – 1 cup
Fenugreek seeds - 1 tsp
Thick butter milk - 2 cups
cooking soda - a pinch (optional)
Salt - to taste
Oil - 1 tsp for each dosa
Method
1.Wash and soak urad dal,rice,fenugreek seeds in water for 4 hours.
2.Wash and soak Poha in buttermilk just 2 hrs before grinding.
3.Grind everything to a fine paste.
4.leave it to ferment for atleast 8 hrs or overnight.
5.Heat a Tawa on medium heat. Add salt and cooking soda to the batter and mix well.
6.Pour a ladle of batter,Spread it little.Dont make it thin.Pour little oil on all sides.
7.Once you see small holes on Dosa,Cover it with a lid and let it cook slowly till it turns golden.
8.When it is done,turn it and cook on the other side for 2 mins.
9.Offer it to Lord with tulasi leaf and Serve.
note:
The fermentation is slow in winter and quick during summer. The key to getting nice dosas is in fermenting the batter.
