Raw Jackfruit Pulav


Ingredients
Raw jackfruit – 1 small
Basmati Rice – 2 cups (wash and soak for 30 mins)
Carrot & green peas – 1 cup
Sliced tomato – 1 small
Cloves – 1
Cinamon stick – inch piece
Cardamom – 2
Bay leaf - 1
Turmeric powder – 1 tsp
Chilli powder – 1 tsp
Salt - as per taste
Pepper powder – ½ tsp
Dhaniya powder – ½ tsp
Jeera Powder – ½ tsp
Coriander leaves – a few
Mint leaves – a few (optional)
Curd – ½ cup
Water – 3 cups
Oil – 3 tsps

Masala Paste
Ginger pieces – 2 tsps
Coconut pieces – 2 tsps
Cashewnuts - 2
Grind all the ingredients into a paste by adding little water and keep it aside.

Method
1.Skin the Jackfruit first. For this, you need to oil your hands and the knife . The fruit exudes a milky gum-like substance which doesn't leave your hands easily. I wore the kitchen gloves as an extra precaution and applied oil to the gloves itself. Keep a small bowl of oil at your side and keep dipping you fingers in to it from time to time as you cut the Jackfruit.

2.Cut the kathal into medium sized cubes. Discard the hard middle section of the it as it doesn't cook.wash pieces,drain the water.

3.Deep fry the jackfruit pieces till golden brown and keep it aside on a paper towel.

4.Heat oil in a pan,Add cloves,cardamom,cinomon stick,bay leaf and fry few seconds.

5.Add carrot,green peas,tomato and fry for few mins.

6.Add Jackfruit pieces,ground masala paste and fry till the raw smell goes.

7.Now add turmeric powder,chilli powder,salt,dhaniya powder,jeera powder,pepper powder and stir it once.

8.Add curd,coriander leaves and mix it well.

9.Add the drained rice & sault for a minute.

10.Add water and let it come to boil.

11.Reduce the flame to low,cover the lid and cook for 15 mins.

12.Serve hot with raita.
